WHAT ARE FRIARIELLI AND HOW CAN I USE THEM???
In Naples, the use of vegetables is prominent as the traditional proteins such as meat, rabbit and fish were scarce and expensive (unless you grew up like Vince where you fished for your dinner!).
Nutrition and taste were always the key drivers for the Italians, and so enter the “Friarielli’ – tender young Italian Style Broccoli also known as “Cime Di Rape” or “Rapini” – referred to as “Turnip Tops”.
These wonderful green vegetables are full of vitamins and minerals like Vitamin A, B6, C, calcium, iron & potassium.
We have asked our manufacturers to provide this product as it is used in Italy– in a can which has been sautéed using a little garlic and salt, as we would at home.
The result is a tasty, ready to use vegetable side dish that is traditionally served with Italian sausage meat. It can be used in a “White” Pasta sauce with the sausages and of course, it is featuring heavily now on gourmet pizzas as part of the “Real Pizza” movement that is growing quickly in foodservice.
